Easy chicken teriyaki meatballs

I used to get ground meat and throw it right in the skillet as an easy meal. THEN I got a scooper (meat baller, whatever you want to call it) and suddenly it was a fun way to elevate my weeknight dinners. Meatballs retain so much more moisture when you do it right. And if you have leftovers, they are an easy snack - literal protein balls. I hope you like this simple teriyaki meatball recipe!

Tips

For a spicier kick, add a pinch of chili flakes to the teriyaki sauce. Garnish the meatballs with chopped green onions or sesame seeds for added flavor and presentation.

Ginger kick

To the teriyaki sauce mixture, add in 1/2 tsp of ground ginger, or 1 tsp of fresh minced ginger

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, mix the ground chicken, breadcrumbs, garlic, onion, egg, salt, and pepper until well combined.

Form the mixture into small balls, approximately 1 inch in diameter, and place them on the prepared baking sheet.

Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown. I use meat thermometer to be sure it reaches that 160-165 threshold.

While the meatballs are baking, prepare the teriyaki sauce by combining soy sauce, honey, and water in a saucepan over medium heat.

Bring the mixture to a gentle simmer, then slowly add the cornstarch (mixed with water). Stir continuously until the sauce thickens.

Once the meatballs are done, transfer them to a large bowl and pour the teriyaki sauce over them, tossing gently to coat.

1 lb ground chicken

1/2 cup gluten-free breadcrumbs

2 cloves garlic, minced

1/2 medium onion, finely chopped

1 egg

Salt and pepper to taste

1/4 cup soy sauce (gf optional)

1/2 cup water

3Tbsp honey

1 tsp garlic powder

1/2 tsp ground or minced ginger

2 tsp cornstarch mixed with 2 tsp cold water
