Easy yet Elevated: Honey Mustard Pecan Salmon

The other night I was feeling lazy, debating DoorDash, when I decided I was too hungry to wait for a 45 minute delivery that sat in a strangers car. So, I instead threw together this salmon dish in less than 30 minutes. It was elevated, fresh, healthy, and tasted better than anything that could have been delivered to my doorstep.


Have you ever had honey mustard flavored nuts? Well, they're addicting - salty, sweet, nutty... it checks all the boxes for me. And so does this salmon dish. It's embarrassingly easy, like you will never have to reference this recipe again. Oh, and: Minimal dishes were dirtied in the making of this dish - huge bonus.


Not only is it easy but requires only four main ingredients, Salmon + Pantry Staples: Dijon Mustard, Honey, Pecans.

Tips

Unlike with most of my salmon dishes, I do not squeeze a lemon at the end, as I don't want to distract from the honey dijon flavor.

Preheat your oven to 400°F.

Season the salmon filets with salt and pepper. Assuming your salmon has skin on still, place skin side down on aluminum foil-lined pan. Do not spray the foil - that way, the skin will stick to the foil and easily remove it for you after its fully cooked.

In a small bowl, combine equal parts honey and Dijon mustard. Glaze the tops of the salmon filets generously with this honey Dijon mixture.

Sprinkle the chopped pecans over the glazed tops of the salmon, pressing lightly to ensure they adhere. If you have a spray olive oil/avocado oil, give it a spray to help the pecans from getting too toasty in the oven. :)

Place the pan of salmon in the oven (at 400°F) and cook for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork. I like to cook my salmon until the internal temperature is at 145°F or higher.

Remove the salmon from the oven and let it rest for a few minutes before serving.

2-3 salmon filets

3 Tbsp honey

3 Tbsp dijon mustard

1/4 cup chopped pecans

salt and pepper
