Apple Pie!

This recipe is adapted from the well-known, much-loved Grandma Ople apple pie recipe. I was never a big fan of apple pie until I made it myself. I found that Granny Smith apples are the real game-changer: the tart flavor contrasts with the sweetness and the warm spices. To ensure I don't lose this recipe, it's getting landlocked here on my recipe page for good measure :)

Preheat your oven to 425°F (220°C).

Roll out one pie crust and fit it into a 9-inch pie plate, then add the apples, forming a slight mound. (Reserve the other crust for topping.)

Melt butter in a saucepan over medium heat. Add flour and stir to form a paste; cook until fragrant, about 1 to 2 minutes. Add both sugars, water, cinnamon, and nutmeg; bring to a boil. Reduce the heat to low and simmer for 3 to 5 minutes. Remove from the heat.

Roll out the remaining pie crust and cut into strips. Arrange strips in a lattice pattern over the apples.

Gently pour the sugar and butter liquid over the lattice crust, ensuring even coverage. Brush some onto lattice, but make sure it doesn't run off the sides.

Bake in the preheated oven for 15 minutes. Reduce the oven temperature to 350°F (175°C) and continue baking until apples are soft and the crust is golden brown, approximately 40-45 minutes.

8 Granny Smith apples peeled and sliced

1/2 cup salted butter

3 Tbps all-purpose flour

1/2 cup white sugar

1/2 cup packed brown sugar

1/4 cup water

2 (9") thawed pie crusts

1/4 tsp cinnamon

1 pinch ground nutmeg
