Gluten-free M&M cookies

I have fallen into the toxic cycle of eating a cookie (sometimes two) every night. I avoid gluten, so I make these with gluten free flour. Gluten free cookies can taste just as good as regular cookies if you do it right, and this recipe gets it right. I have tried many recipes, with some turning out too crunchy others too dense... but this ingredient equation is the one. Substitute choc chips in place of the m&ms for a just as yummy, slightly less colorful, cookie.

Tips

Ensure the butter is at room temperature to achieve the perfect cookie texture. For an extra crunchy variation, try adding chopped nuts such as almonds or pecans. Store cookies in an airtight container to retain freshness.

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

In a large bowl, beat together the softened butter, granulated sugar, and light brown sugar until creamy and smooth.

Add in the eggs and vanilla extract, mixing until well incorporated.

In another bowl, whisk together the gluten-free flour, baking soda, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips or M&Ms by hand.

Using a cookie scoop or tablespoon, drop dough onto prepared baking sheets, spacing them about 2 inches apart. Optional - Gently press a few more M&Ms into the tops for decoration.

Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Avoid over-baking to ensure a chewy center.

Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

3/4 cup softened butter

1 cup light brown sugar

1/4 cup granulated sugar

1 large egg + 1 egg yolk

1 TBSP vanilla extract

WET

1.5 cups (225g) gluten free flour

1/2 cup (50g) almond flour

3/4 tsp baking soda

3/4 tsp salt

DRY

1 cup chocolate chips or M&M
