These stuffed peppers are one of those meals that somehow feel like comfort food and meal prep at the same time. They have plenty of protein, vegetables that serve as a bowl, and the obligatory sprinkle of cheese that makes life worth living.



The best part is that the filling is hard to mess up. I usually take a quick look through my pantry and see what I have that can bulk it up. Sometimes it's black beans, other times it's corn, diced tomatoes, or whatever else sounds good. Once you have the basic method down, it's easy to make them your own.


A few flavor ideas:

  • Mexican: Black beans, corn, salsa, taco seasoning, cheddar, cilantro

  • Italian: Marinara, spinach, mozzarella, Parmesan, Italian seasoning

  • Greek: Spinach, feta, tomatoes, oregano, lemon

  • Buffalo: Buffalo sauce, ranch seasoning, cheddar, green onions

  • Cheeseburger: Diced onion, ketchup, mustard, cheddar, pickles after baking


However you choose to fill your peps, use this recipe as a guide for how to cook them efficiently so that the peppers get soft and the meat maintains its moisture.


I usually make a batch on Sunday and reheat them throughout the week. They're filling on their own, but avocado, Greek yogurt, or a squeeze of lime never hurts. Simple, reliable, and hard to mess up.

Prep the peppers - Heat oven to 400°F. Arrange pepper halves in a baking dish and add a splash of water to the bottom

Make the filling - Brown the ground turkey in a skillet over medium-high heat. Add chili powder, cumin, garlic powder, salt, and pepper. Simmer for 2 to 3 minutes.

Stuff the peppers - Fill each pepper generously with the turkey mixture. Cover the dish with foil.

Bake covered for 25 minutes. Remove foil, sprinkle with cheese, and bake another 10 to 15 minutes until the peppers are tender and the cheese is melted.

Finish - Top with chopped cilantro. Serve with Greek yogurt, avocado, or a squeeze of lime.

3 large bell peppers halved lengthwise and seeded

1 lb lean ground turkey

1 15 oz can black beans drained and rinsed

1 cup salsa

1 tsp chili powder

1 tsp cumin

1/2 tsp garlic powder

Salt and pepper to taste

1/2 cup shredded cheese

Fresh cilantro
