Four Ingredient Samoas

I am a former Girl Scout (do we call that a Girl Scout alum?), so it only felt right to share this Samoa-inspired treat. It tastes decadent and nostalgic while still feeling light and made with simple, wholesome ingredients. With just four ingredients, it's incredibly easy to throw together and makes the perfect afternoon sweet treat or post-dinner dessert.
I was in Troop 297, and I have so many fond memories of our weekly Girl Scout meetings led by our troop leader... my mom. :)
Girl Scouts is about so much more than the cookies. At its core is the Girl Scout Law, which encourages every Scout to strive to be:
Honest and fair
Friendly and helpful
Considerate and caring
Courageous and strong
Responsible for what I say and do
Respectful of myself and others
Respectful of authority
Wise with resources
A maker of the world a better place
A sister to every Girl Scout
Looking back, I realize how many of those values have stayed with me into adulthood.
What isn't listed in the Girl Scout Law, though, is the sales mindset that cookie season quietly teaches you. For the competitive and outgoing girls, this is where we really got to shine. I loved going door to door (or office to office), putting on a smile, making my pitch, and closing the sale. Looking back, it's kind of funny how much those early experiences resemble skills I still use professionally today.
I could probably write another few pages reminiscing about Girl Scouts, but I'll spare you and get to the recipe.
Four Ingredient Samoas
Ingredients
1 ripe banana
1 cup shredded unsweetened coconut
Dark chocolate
Flaky sea salt
Instructions
Preheat your oven to 350°F.
Mash the banana until smooth, then stir in the shredded coconut until fully combined. Form the mixture into small cookie shapes and use the end of a chopstick (or your finger) to create the signature hole in the center.

Bake for 25 to 30 minutes, or until the edges begin to turn golden brown. Let the cookies cool completely.
Meanwhile, melt the dark chocolate. I like to add a small spoonful of coconut oil to help it melt into a smooth, glossy consistency. Drizzle the chocolate over each cookie, then finish with a sprinkle of flaky sea salt.

Let the chocolate set before serving. The recipe is easy to double or triple, and trust me... you'll probably want to.
