Chocolate Strawberry Granola

Tis the season for all things chocolate! All things pink and red! This granola is as festive as granola can get for Valentine's Day. Ideally, it is meant to be eaten in a robe and slippers with a smile that makes you look like you are in a 2010s yogurt commercial.

Since we all long to have chocolate-covered strawberries for dessert, I took the liberty to craft up a recipe for just that. This granola combines the sweetness of strawberries with rich dark chocolate, creating a treat that feels indulgent yet wholesome. I threw in some goji berries as well for antioxidants and because PINK!

Freeze-dried strawberries take me back to childhood when my mom would have Special K cereal in the pantry. I would get into the box and pick out all the strawberries so all that was left were the sad wheat flakes. This granola packs in way more than Special K ever could—with dark chocolate, roasted almonds, and undertones of coconut from the coconut oil... It's making me think I should send a tub to my mom as atonement for my past cereal bandit behavior.

Try adding shredded coconut or swapping out the strawberries for freeze-dried raspberries for a different flavor profile.
Notes

Preheat your oven to 300°F. Line a large baking sheet with parchment paper.

In a large microwave-safe bowl, combine the coconut oil and honey. Microwave for 30 seconds, then stir until smooth.

Add the rolled oats, sliced almonds, coconut sugar, salt, flaxseed, and vanilla extract to the coconut oil mixture. Stir until all the ingredients are well coated.

Spread the granola mixture evenly onto the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through, until golden brown.

Remove the granola from the oven and allow it to cool completely on the baking sheet to crisp up.

Once cooled, gently mix in the freeze-dried strawberries, dark chocolate chips, and goji berries

3 cups rolled oats
1 cup sliced almonds
1/2 cup coconut oil
1/4 cup honey
1/4 cup coconut sugar
1/8 cup ground flax or almond meal
1 tsp vanilla
1 tsp salt

1 cup freeze-dried strawberries
3/4 cup dark chocolate chips
1/2 cup goji berries
