Cherry Cocoa House Granola

I am excited to share another granola recipe! This cherry cocoa flavor was a customer favorite at the farmer's market where I originally sold House Granola. There's so many ways to customize this recipe, but you won't be disappointed if you follow the recipe as is. Subtle flavors of coconut, rich cocoa flavor swirling with vanilla, chia, flaxseed, and of course the dried cherries.
If you nix the chocolate chips and opt for unsweetened cherries, this recipe is free from any refinedsugar

While this is a lovely breakfast paired with berries and yogurt/milk, you can't go wrong using it as a crunchy ice cream topping or on its own.

Storage Tip
Store the granola in an airtight container at room temperature for up to two weeks.

Serving Suggestion
Serve the granola with yogurt and fresh berries for a wholesome breakfast. Or, for a more decadent option, sprinkle this granola on top of your favorite ice cream :)
Notes

Preheat the oven to 300°F and line a baking sheet with parchment paper.

In a large mixing bowl, combine the dry ingredients.

In a smaller bowl, whisk together the coconut oil, honey, and vanilla extract until well combined.

Pour the wet ingredients over the dry mix and stir until the oats and seeds are well coated.

Spread the granola mixture evenly on the prepared baking sheet.

Bake for 30-40 minutes, stirring halfway through to ensure even toasting. Keep an eye on the corners of the baking sheet as they tend to cook faster.

If you have not already, toast your coconut in the oven for 5-10 minutes, stirring half way through. You want it to be just golden.

Remove granola from the oven and allow it to cool slightly before adding in the coconut flakes and dried cherries.

Once the granola has fully cooled, add the chocolate chips (optional).

3 cups rolled oats
1/2 cup chopped almonds
1/3 cup cocoa powder
2 TBSP chia seed
2 TBSP flaxseed
1 tsp salt
1/4 cup coconut sugar
Dry Ingredients
1/2 cup coconut oil
1/4 cup local honey
2 tsp vanilla
Wet Ingredients
1/4 shredded or flaked coconut
1/2 cup dried cherries
1/4 cup chocolate chips (optional)
